Preheat oven to 220°C / 200°C fan / gas mark 7. In a bowl add the Panko Breadcrumb, Mixed Herbs and a drizzle of olive oil. Chop the Parsley and add to the bowl. Season with a little salt and pepper and mix well.

On a baking tray add the Chicken Breast and spread the Mayonnaise over the top. Sprinkle the mix from the bowl over the Mayonnaise and pop the tray on the top self of the oven for 25 - 30 minutes. Pop a pan of water on with a little salt on the boil.

Chop the Potatoes into chunks and pop into the water. Cook for around 15 - 20 minutes or until soft. Meanwhile slice the Red Onion and pop it in a hot frying pan with a drizzle of oil. Cook for about 10 minutes or until soft.

Grab the Green Beans and trim the ends. Prep the Garlic Clove (chop, grate, press). Pop the Green Beans into the same pan as the onions for 5 - 10 minutes. Then stir in the Garlic Clove for the final minute. Stir through the Balsamic Vinegar and a drizzle of olive oil and stir together.

Drain the Potatoes and mash with a little Butter. Season with a little salt and pepper. Grab your plates and share out the mash, Chicken Breast and the Garlic Clove Green Beans and Red Onion with a little dressing from the pan. Eat and enjoy!
